Honey-roasted vegetables*
1.5 kg pumpkin, peeled, seeded and chopped into 8 cm cubes
4 Red peppers, seeded and quartered
2 Red onions, peeled and quartered
8 Red tomatoes, cored and quartered
1 Head of garlic, cut in half horizontally
4 Red chillies, split in half, seeded
4 Tablespoons extra virgin olive oil
2 Tablespoons honey
A few sprigs of thyme leaves
125 g Ricotta cheese
Sea salt and freshly ground black pepper
- Preheat oven to 200 degrees Celsius
- In a large mixing bowl, mix all the ingredients together until well dressed and tip into a large roasting dish
- Roast in the oven for 40 to 45 minutes until the pumpkin's going golden, and just stir the vegetables occasionally
- Cool for 5 minutes and give the vegetables a good stir before serving.
